Everybody knows the famous regional styles. There's Kansas City barbecue, Carolina barbecue, Alabama barbecue, Korean barbecue, and Texas barbecue. There's even Kentucky barbecue.
Owensboro isn't in Appalachia though, and neither is coastal Carolina. Memphis isn't either. The regional styles we could claim are already in use by the non-Appalachian regions of those states.
That's why we prefer the term Appalachian barbecue. We've had some people ask us: what is Appalachian barbecue?
Appalachian barbecue is truckloads of pork smoked over locally-grown firewood.
Appalachian barbecue is smoked chicken and dumplings.
Appalachian barbecue is smoked pork belly soup beans and cornbread.
Appalachian barbecue is smoked meatloaf and smoked bologna.
Appalachian barbecue is smoked hamburger or brisket chili.
Appalachian barbecue is a rooted yet beautifully modern tradition of blending classic barbecue styles and techniques with those comfort foods we all grew up with.
Appalachia wants its spot on the BBQ map.
